I'm coming from Advantage ADS Server which had a convenient SDK C++ call to do this. I have looked everywhere for an example of storing a variable binary field in Sql Server using c++ builder....does anyone have a handy example of storing and retrieving such a field to from a SQL Server database?

Binary data is stored in blobs. You can use
TDataSet.CreateBlobStream() to access blob fields, or if you are using
stored procedures that pass blobs in parameters, look at the
TParam.AsBlob or TParam.AsStream property.
