It was some months ago I've tested my multi platform app with the iOS Simulator (using MacIncloud).

But today on deployment I get an error in Delphi:
"Cannot Deploy iOS App to iOS Simulator
Unable to launch process on '77.xxx.xx.xx' using the parameters from the 'MacinCloud' profile.
The following error was returned: 'Session ended'"

I checked my connection in Delphi Tools->Options->Connection Profile Manager and this was just successful.
I can also still successfully deploy my app using Platform iOS Device 64 bit.
Remakable: if I do a refresh on the iOS Simulator Target node in the Project Manager panel, I only have iPad, iPhone and iPhone 5. I remember I got a much longer list before.

I use:
Delphi XE 10.1 Berlin update 2 (FMX)
PAServer 18.0 (running)
iOS Simulator 8.4 (running)
XCode 7.1.1 (running)

Has someone some idea what is going wrong?

I tried several other versions of XCode and iOS Simulator and finally XCode 7.2 (with iOS Simulator 9.2) worked!
