I cannot find any document that mentioned which unicode version supported in Delphi version.
Does anyone know?

Because there isn't one. Delphi does not actually implement Unicode itself,
it delegates to the underlying platform instead to handle Unicode encoding/decoding.
On Windows, that means call to the Win32 API MultiByteToWideChar() and WideCharToMultiByte()
functions. On other platforms, that means the libiconv library. So, it is whatever
version of Unicode that they implement.
